Makes 4 servings
1/3 cup olive oil
1 clove garlic minced
¾ cup fresh coriander, chopped
2 ripe avocados, cubed
1 large cucumber, peeled and diced
¼ cup lemon juice
Sea salt and black pepper, to taste
Blend all ingredients in a food processor or blender. Store in a jar. Label and date and use within a week.
