Ready in 30 minutes, makes 2 servings
3 oz can tuna
1 egg white
1/3 cup each chopped onion, leek, tomato & shredded carrot
4 cucumber slices
Sea salt & black pepper to taste
In a bowl, mix together tuna, egg whites, chopped veggies ( except cucumber slices) & seasoning.
Shape mixture into 4 balls and press onto a baking sheet coated with non-stick spray. Bake for 20 minutes.
Serve on top of cucumber slices.
