Healthy lemon chicken

WHY not try this healthy lemon chicken recipe which has been submitted from Body and Mind:

 

Ingredients:


2lbs boneless skinless chicken breasts cut into pieces (approx. 1 1/2inch x 1 1/2 inch)
3 tablespoons olive oil
1 tablespoon seasoning for poultry
4-6 garlic cloves, crushed
Zest of 2 lemons
3 tablespoons fresh rosemary leaves removed from stem
¼ cup dry white wine
¼ cup chicken stock
¼ cup lemon juice

 

Serves: 4

 

Method:

 
Preheat oven. Arrange chunks of chicken in 9 x 13 baking dish, top with the lemon zest, olive oil, fresh rosemary, seasoning for poultry and crushed garlic cloves. Stir and toss to coat. Spread chicken out evenly in dish. Roast for 18-20 minutes.

 
Combine the lemon juice, stock and wine in a container with a spout. Turn oven off. Pour lemon juice mixture over chicken while scraping the pan and loosening the meat. Let stand in oven for five minutes before serving.

Protein = 45 per cent
Carbohydrate = 5.2 per cent
Fat = 49.8 per cent
Calories per serving = 256
