IT is the last day of Farmhouse Breakfast Week today (Saturday) so why not try this recipe this weekend?
Greeba Farm Mushrooms has been supporting the initiative all week and each day has provided isleofman.com readers with a recipe designed to tempt the tastebuds.
The theme of this year's Farmhouse Breakfast Week has been "Shake Up Your Wake Up" and was designed to encourage more people to eat breakfast.
Today's recipe is:
Baked stuffed Greeba Farm breakfast flat mushroom
Preparation time: 10 minutes
Cooking time: 15-20 minutes
Makes: Serves 4
Ingredients
4 large Manx eggs
1 clove garlic - finely chopped (optional)
4 slices of Manx cured bacon finely chopped
Ellerslie rapeseed oil or olive oil
1oz Isle of Man Creamery butter
10oz homemade breadcrumbs
4 Greeba Farm breakfast flat mushrooms
4oz of Gruyere cheese or Isle of Man Creamery Vintage Cheddar
Freshly ground black pepper and salt (optional)
Fresh or dried herbs (optional)
Vinegar to poach eggs
Method
1. Gently cook the garlic and bacon in a little olive oil and butter.
2. Add more butter (½ to 1oz) to the pan.
3. Add the breadcrumbs and allow them to soak up the butter.
4. Season to taste. Add herbs at this stage if required.
5. Fill the mushrooms with the breadcrumb and bacon mix and sprinkle with cheese.
6. Place in a hot oven for eight to 10 minutes.
7. Poach the eggs in just boiling water with vinegar.
8. When the mushrooms are ready, remove from the oven and top with an egg.
9. Season again if required and pour over a little warm oil.
10. Serve with crusty bread.
Top tip
Use up just stale bread to make breadcrumbs. Use Manx sausage meat as an alternative to the bacon.
