Farmhouse Breakfast Week – Day 6: Mushroom crepe

GREEBA Farm Mushrooms is supporting Farmhouse Breakfast Week to encourage more people to eat breakfast.
 
The local mushroom farm is supporting the "Shake Up Your Wake Up" initiative which encourages the public to eat in the morning.
 
The following recipe, which uses locally sourced produce, has been provided by Greeba Farm Mushrooms to tempt your tastebuds this morning:


Mushroom crepe

 

Preparation time: 10 minutes 
Cooking time:  15 minutes – (Oven: 200°C) 
Makes:  Serves 4  

 

Ingredients

 
12oz Plain Laxey Glen Mills Flour
16 oz Isle of Man Creamery milk
1 medium Manx egg
40g Isle of Man Creamery butter - melted
1tbsp Ellerslie rapeseed oil or olive oil
400g Greeba Farm white button mushrooms - sliced
200g Greeba Farm brown button mushrooms - sliced
4 spring onions or chives - sliced
1 tbsp Worcestershire sauce
240ml pint crème fraiche
470ml grated Isle of Man Creamery cracked peppercorn or oak smoked cheese

 

Method

 
1. Whisk together flour, milk and eggs by hand or blend in a food processor until smooth. Pour batter into a jug.


2. Heat a frying pan over a medium heat greasing lightly with some of the melted butter.


3. Pour ¼ of the batter into the hot pan. Tilt the pan to cover the base with the mixture. Cook for two minutes or until golden, turn and cook for one minute. Remove to a plate.


4. Repeat cooking three more crepes.


5. Preheat oven to 200°C. Meanwhile, heat oil in a frying pan over a high heat, add the mushrooms. Cook, stirring for five minutes or until the liquid has evaporated. Add onions and Worcestershire sauce and cook for a further minute. Stir in crème fraiche.


6. Season filling mix to taste.


7. Spoon the mushroom mixture onto a crepe at a time, topping with cheese.


8. Roll each crepe and place in an ovenproof dish.


9. Sprinkle the crepes with any remaining cheese.


10. Bake for 15 minutes or until hot and serve.


Top tip

 
Add chopped Manx cured bacon or ham. This could be served with a fresh green salad for a lunchtime treat.
