Farmhouse Breakfast Week - Day 2: Mushroom BLT

GREEBA Farm Mushrooms is supporting Farmhouse Breakfast Week to encourage more people to eat breakfast.

 

The local mushroom farm is supporting the "Shake Up Your Wake Up" initiative which encourages the public to eat in the morning. 

 

The following recipe, which uses locally sourced produce, has been provided by Greeba Farm Mushrooms to tempt your tastebuds this morning:

 

Mushroom BLT


Preparation time: 10 minutes 
Cooking time:  5 minutes  
Makes:  Serves 4

 

Ingredients


2 tbs Ellerslie rapeseed oil or olive oil
4 Greeba Farm large flat mushrooms
6 rashers Manx cured bacon - rind removed
8 slices Ramsey Bakery Manx Country Grain bread - toasted
¼ cup egg mayonnaise
2 tsp Dijon mustard
3 iceberg lettuce leaves - shredded
½ cup oven-dried tomatoes or sun dried tomatoes - chopped
Salt and pepper to taste

 

Method
1. Heat a large frying pan or skillet on high.


2. Drizzle both sides of the mushrooms with oil and season.


3. Fry for three minutes each side or until tender. Remove to a baking tray.


4. Fry the bacon until golden and remove to the tray.


5. Place four slices toasted bread on the board.


6. Combine mayonnaise and mustard and spread over one side of toast.


7. Top with lettuce, mushroom, bacon and tomatoes.


8. Season with salt and pepper.


9. Top with remaining bread and serve.


Top tip:
This is based on an Australian BBQ recipe and could be cooked outside on a barbeque. To reduce calories replace the egg mayonnaise with a dollop of thick Greek style yogurt.
