IT'S the first day of Farmhouse Breakfast Week today (Sunday) and members of the public have been encouraged to "Shake Up Your Wake Up" and have breakfast.
Local mushroom farm Greeba Farm Mushrooms is supporting the campaign which runs to January 28.
It has provided the following recipe, using locally sourced mushrooms, to tempt your tastebuds this morning:
Eggs Benedict on a Portabello mushroom
Preparation time: 20 minutes
Cooking time: 15-20 minutes
Makes: Serves 4
Ingredients
Hollandaise Sauce
1 large Manx egg yolk
1 tablespoons (30 ml) water
7 tablespoons (100ml) of clarified butter (warm)
1 teaspoon of lemon juice
Salt to taste
Cayenne pepper to taste
Eggs Benedict
4 large Manx eggs
4 Greeba Farm Portabello mushrooms
Water
½ tablespoon of vinegar
Method
1. Lightly brush Portabello mushrooms with a little butter or oil. Place on a baking tray and bake in medium oven for approx. 15 to 20 mins depending on size.
2. For the Hollandaise sauce start by clarifying the butter (see a good cook book or web for details).
3. Place the egg yolks and water in a heatproof bowl and whisk together.
4. Place this bowl in a saucepan of simmering water, taking care that the bowl does not touch the water.
5. Whisk and whisk for about three minutes until light and frothy – known as sabayon. Do NOT allow to scramble!
6. Remove this mixture from the heat and add the warm clarified butter in a slow steady stream, whisking constantly.
7. If the sauce gets too thick carefully add a few drops of warm water to achieve the desired consistency.
8. Season the sauce with lemon juice, salt and cayenne to taste.
9. Keep the sauce gently warm until ready to serve.
10. Poach the eggs in just boiling water with the vinegar.
11. Lift and set in a bowl of cold water when ready to prevent overcooking.
12. Plate up as each egg is ready. Portabello mushroom first, poached egg and top with a good tablespoon of hollandaise sauce.
Top tip:
Cheat and buy in the Hollandaise sauce but once mastered you will never want shop bought Hollandaise again!
If you want to go the whole hog try with bacon, smoked salmon or smoked haddock – delicious!
