Until recently coley (or coalfish as it is sometimes known) was branded the poor man’s cod and was mostly bought by cat-lovers as a treat for their furry felines.
However changes in the economy gave coley the chance to quietly flourish.
Today with the help of various celebrity chefs championing this sustainable member of the cod family it's rising through the ranks of restaurant menu and now often rivals its over-fished cousin.
To cook simply…
Dust with seasoned flour and pan fry with butter and lemon. It can also be baked or why not try 'en papillote' with seal and cook bags. It goes especially well with tarragon and lemon or chilli butter.
Until Sunday, June 5, coley will be £4.52 per lb. There will be a sampling session at the Paddy's counter in Shoprite, Victoria Road, Douglas on Saturday.
