Paddy’s Fish of the Week – Smoked Haddock

THIS week Paddy's has chosen smoked haddock as the Fish of the Week.

 

All about smoked haddock…

 

Paddy's are proud to smoke the haddock 'au natural' using none of the dyes found in smoked haddock you will see on many other fish counters.

 

The smoking process involves soaking the haddock in a brine solution then leaving it until sticky before smoking over wood chips for about seven hours.

 

Natural smoked haddock is not yellow but more of an off-white colour, the flaky texture of haddock makes it excellent for many dishes.

 

To cook simply…

 

Smoked haddock has long been a favourite for breakfast whether as an omelette, kedgeree or simply poached with an egg on top.

 

It can be lightly poached in milk, grilled or baked with some butter. You could also try flaking some through a fish pie or adding to a risotto to give extra flavour.

 

This week smoked haddock will be £5.99 per lb instead of £8.16 per lb. Sample some of the fish in Victoria Road, Shoprite on Saturday, May 7.
