Paddy's Fish of the Week - Salmon

by isleofman.com 19th April 2011

THIS week Paddy's has chosen salmon as the Fish of the Week:

All about salmon…

Paddy's Salmon is sourced from Wester Ross Fisheries, which was established in 1977 and is now a fully integrated salmon farming company. Farms are freshwater and seawater and they are based on the North West coast of Scotland.

Through Wester Ross Paddy's ensure all our salmon is reared to the highest welfare standards, with all farming activities meeting the stringent requirements laid down by the RSPCA Freedom Food standards.

All operations minimise environmental impact and this ensures Wester Ross produces the finest quality Salmon in harmony with the natural environment.

To cook simply...

Allow for a good heat to crisp up the flavourful skin and get the oils working while leaving it on a gentle heat to cook through. Watch the colour build through the flesh until you can see the preferred tones and simply turn and cook to finish – perfect topped with our garlic and parsley butter. Alternatively poach and serve cold with mayonnaise and a crispy salad.

This week salmon fillets will be £5.50 per lb instead of £7.67 per lb - delicious for Easter.
