Paddy's Fish of the Week - Halibut

THIS week Paddy's has chosen halibut as the Fish of the Week:

 

All about halibut…

Halibut is one of the lesser known and best kept positively farmed fish. Its excellent white meat makes it versatile for grilling, steaming and pan searing crisp.

 

Farmed from the cool fjords of Norway to between four kg and eight kg it makes for great steaks and meaty fillets.

 

It is widely used in restaurant cooking and is made more accessible as prepared by our expert fishmongers, which makes it the perfect fish to cook at home.

 

To cook…

Halibut is a very forgiving fish and makes for great eating.

 

Most simply it can be seared to give a crisp top with a gentle moist fish beneath.

 

It requires very little cooking - cook on a high heat for three to four minutes and then turn and baste with a knob of butter to gently steam and glaze.

 

Paddy's will be holding an in-store sampling session on Saturday, April 16, at Shoprite, Victoria Road, Douglas. This week halibut fillets will be £11 per lb instead of £14.65 and halibut steaks will be £9 per lb instead of £11.91
