Manx Wild Garlic Pesto

YOU have to be a garlic lover for this dish as it's got a real zing to it, depending on how fresh the garlic. It's dead easy to make in just a few minutes.

 

INGREDIENTS:

100 g Manx wild garlic

8 gherkins, chopped

20 capers

1 lemon

50 g parmesan, grated

 

METHOD:

 

1.  Roughly chop the wild garlic leaves. Add the gherkins, capers and Parmesan cheese and chop together finely.

 

2.  Stir in the juice from the lemon and season to taste with salt and freshly ground black pepper.

 

3.  Wild garlic pesto is good served with fish and buttered new potatoes. It's also perfect as the base sauce with pasta.

 

Handy hint:  If you haven’t got wild garlic - or it’s out of season - then substitute with rocket which works very well too.
